Grilled Peaches with Balsamic Reduction + Honey Yogurt

I didn’t cook nearly enough with peaches this summer. Did you? They’re one those versatile ingredients that can be used in anything from salsa to poultry glaze to a yogurt topping. Peaches are the best! The title of this recipe says it all: hot grilled peaches over cool sweetened yogurt, with thick balsamic drizzle and pistachios for crunch. It’s ridiculously good. Easy to plate and make look beautiful- but don’t take too much time plating. The peaches need to be served hot off the grill- there’s no other way to enjoy this dessert.
Servings 8 single servings

Ingredients
  

  • 1 cup balsamic vinegar
  • 10 oz. plain Greek Yogurt
  • 3 tablespoons honey
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • 4 peaches
  • 2 tablespoons canola oil
  • ¼ cup chopped pistachios

Instructions
 

To make:

  • Over high heat in a small bring balsamic to a boil, then reduce to medium heat and simmer, for 20 minutes, until
  • Add Greek Yogurt, honey, vanilla and salt into a small bowl and mix to combine. Taste and adjust flavor using more honey if you prefer sweeter. Cover and place in refrigerator.
  • Halve peaches and remove the pit. Over high heat, place peaches cut side down and do not move for 4 ½ minutes.

Plate:

  • Spoon yogurt mixture on the bottom, of a plate. Use the back of the spoon to smooth out yogurt and create a tear drop shape.
  • Place grilled peach half onto the yogurt.
  • Sprinkle pistachios over top.
  • Using a spoon gently drizzle balsamic reduction over top.

Notes

Serve immediately- peaches should be hot!
